Jose Rivera is an experienced coffee producer, growing a number of interesting varieties on El Rejo. The Sidra variety is known for its outstanding cup quality, complexity, floral and tropical notes. The cherries are fermented for 24-36 hours and washing the pulped coffee enhances clarity, sweetness, and structure.
